FUSION defrosters defrost food using the condensed latent heat of 539 kcal / kg. The latent heat of condensation occurs when the steam is converted into water droplets.

By using the large energy of latent heat, a much faster defrost occurs with adequate humidity, resulting in being more efficient, with better performance and much higher quality, achieving a totally ecological defrost.

The freezing time depends on each food, but as a general rule each kg of frozen food requires a certain time for defrosting (approx. 4 kg requires 4 hours and so on).

The Importance of Defrosting

When food is defrosted, the surface layer of ice melts to form a layer of liquid water whose thermal properties are inferior to those of solid state water.

As a consequence, and due to the speed with which heat is transferred into the food, this insulating effect increases as the layer of defrosted food increases. That is why the defrosting of a food, for the same temperature gradient, is slower than its freezing.

Current freezing technologies cause cellular damage that manifests itself in defrosting in the form of exudates (loss of fluids). The exudate is not only a loss of water but also of several of the nutritional components of the food (proteins, vitamins, ...). Poor defrosting increases exudate losses.

FUSION, the complementary technology to PROTON® freezing

PROTON® has developed a technology that maintains all the benefits obtained by freezing with PROTON® and allows extremely fast defrosting. Our technology uses Dry Steam which has a very low moisture content (4% aprox) and the other 96% is high temperature air.

Dry steam is generated by changing the liquid state of the water to its gaseous state with increasing temperature. When the steam is pressurized, it begins to gain temperature and the water molecules begin to dry thanks to this high temperature.

Thanks to this, FUSION defrosters are an excellent tool for defrosting due to their high temperature and minimum humidity properties.

Types of FUSION Defreezers

This magnetic freezer is ideal for homes and for HORECA. Allows almost instantaneous defrosting and eliminates losses, by defrosting only the food needed in each service.

For your complete peace of mind, PROTON EUROPE SL has a Technical Service specialized for the assembly, maintenance and repair of freezers PROTON® and FUSION defrosters.

We have demonstration machines to carry out freezing tests, apart from those that can be carried out in our showroom at the CIB (Culinary Institute of Barcelona).

EU MARKING

All our PROTON freezers and FUSION defrosters are adapted so that upon delivery they comply with all the EU regulations (EU Marking).

The smallest models, PF-3 and PF-15, as well as the KINOKO defreeze model, do not need any type of installation, only having to be plugged into the mains and additionally needing a transformer.

The rest of the PROTON freezers and FUSION defreezers require, for their correct operation, a specific auxiliary machinery for each model (external condensing unit and / or dry steam generation unit, drain pipe and transformer) and some auxiliary installation work ( electricity and water).

Our Spanish technicians can supply you with the appropriate auxiliary units for your equipment and perform the necessary auxiliary installation work.

The sale price does not include the machinery or the auxiliary installation work necessary for the correct operation of the equipment.

Pre-installation

The installation and startup of the PROTON and FUSION models (except for the PF-3 and PF-15 freezers and the KINOKO defreezers) are carried out by factory technicians from Japan, which will ensure the correct operation of your equipment. and making specific adjustments for the perfect freezing of your product.

In addition, the Japanese technicians, together with Spanish technicians, will carry out the test operations test and the final connection and commissioning work.

The cost of the travel of the Japanese technicians is included in the sale price of the machine.

Installation and IMPLEMENTATION

We have the "PROTON ®️ IN HAND" service so you don't have to worry about a thing, you just have to turn the "ON" button.

Our TECHNICAL SERVICES will provide you with the auxiliary machinery complementary to the main equipment and will travel to your facilities to carry out the auxiliary installation work necessary for the correct operation of your equipment.

PROTON®️ does not require any special maintenance.

PROTON freezers and FUSION defreezers have been developed based on the "Maintenance Free" philosophy.

Preventive maintenance: We carry out (optional) an annual maintenance contract that includes an annual review.

Corrective maintenance: Not necessary

MAINTENANCE

Our equipment is 100% reliable, made entirely in Japan (including all its components) and designed to function properly without any problem throughout its useful life.

In the hypothetical case that you have an incident, our technical service will be at your home within 24 hours of communicating your incident.

We also have an ON LINE service for inquiries by phone or mail.

MALFUNCTIONS

Our Technical Services can customize (optionally) both the freezers and the defreezers with the design that you want, to match the rest of the equipment.

In the small models, we can also provide them with mobility by attaching a platform with wheels.

EQUIPMENT CUSTOMIZATION

Our manufacturer RYOHO FREEZE SYSTEMS CO., LTD. has an Engineering Department in Japan capable of developing any type of Freezing and / or Defreezing Project needed.

For large volumes of freezing through continuous freezing tunnels, our engineers in Japan will carry out a customized design of the tunnel adjusting the effective length of the conveyor belt of said tunnel, the necessary freezing time of the food to be frozen and the freezing capacity per hour desired.

Thanks to these customized calculations, we can present you tunnel projects with a freezing capacity of up to 5,000 kg / h in IQF or block.

Likewise, our Engineering Department can develop large-volume defreezing projects.
